Hello! In the Kitchen this week is my good friend Patricia Nichols with this delicious recipe. Who likes lemon? I do! Those that like lemon, this is a recipe for you. Plus, it’s easy to make and doesn’t have a lot of ingredients. School is back in session, so we need quick and easy recipes.

Ingredients
2 cups of ricotta cheese
1 container of lemon Greek yogurt
1 pkg of lemon pudding mix
1/2 of container cool whip
Graham cracker crumble
Directions
Combine ricotta, yogurt and pudding mix.
Next, layer your crumble (mine is a crunched-up graham pie crust). Cookies, ritz, granola or graham crackers would all work.
And I used cool whip to layer. (Again you can use what you like here. Whipped cream works of course).
This made six mini deserts but would make two to three nice-sized servings.
